I. Love. Elote. What is that you ask? It is Mexican Street Corn, and if I was only able to eat one thing for the rest of my life, this would be it.

Check it out. Aldi has done it again! They have taken my FAVORITE thing on earth, and turned it into a dip! I could eat this stuff right out of the container — YUM!! But, it’s also good with chips, tortillas, or bread.

It’s made from Fire Roast Corn — that’s a crucial ingredient!! — Cilantro, red chili spices, mayo, sour cream, Monterey Jack cheese, Cotija, and Neufchâtel cheese. Basically, it is EXACTLY Mexican Street Corn, but in dip form.

Each container of this Mexican Street Corn Dip is less than $3.50. Don’t let me dwell on the fact that it’s so cheap; I’m liable to buy up every single container at my Aldi. I’m serious. I’m seriously addicted.

The first time I had Elote, it was at an authentic little Taco House in Tennessee. I was HOOKED after trying it once. We had to go back and get some the next day, because I couldn’t stop thinking about it. Does that make me a freak? Maybe just a little bit.

This is, obviously, in the cooler section of Aldi, and I’m HOPING, since it’s not in the dreaded SEASONAL cooler, it will be something they continuously carry. I can cross my fingers and toes, and hope.

Something else that Aldi is currently carrying, are these Mexican-style Street Corn Chips. Don’t get all crazy on me — these aren’t as good as the dip, but they are hella-good.

My daughter would consider this spicy — but she thinks bell peppers are spicy — so plan accordingly. It has some spices on it, but it’s not going to burn your mouth up.

Would it be overkill to eat the Mexican Street Corn Dip with the Street Corn Chips? I don’t think so!! Do it.

Now, this has absolutely NOTHING to do with Street Corn, but another one of my favorite obsessions of the moment are succulents. I wouldn’t be doing my job proper if I didn’t let you know that, while you are at Aldi getting your Mexican Corn Dip, head on over to the Aldi Finds aisle.

They have the CUTEST $4 Succulents. You need one for your desk!
