White chocolate anything always has me immediately excited, and white chocolate sugar cookie bites are completely delicious in every way.
They’re such an easy to make bite-sized snack. I always make these when I have a pile of kids at my house.
Oh, and they travel well, too. I love when you can put a snack into an air tight container and take it on a road trip. That makes things way easier!

What You Need To Make White Chocolate Sugar Cookie Bites
- 4 tbsp butter, softened 1⁄2 cup sugar
- 1⁄2 teaspoon vanilla
- 2 teaspoons milk
- 3/4 cup flour
- 12 oz white chocolate chips
- Sprinkles
How To Make White Chocolate Sugar Cookie Bites
- Cream butter and sugar together.
- Add vanilla, milk, and flour. Mix until combined.
- Place dough in between two pieces of wax paper. With a rolling pin, roll dough to 1/4 inch thick.
- Peel top piece of wax paper off. Refrigerate for 30 minutes.
- Using a 1-inch round cookie cutter, cut 48 circles out of dough.
- Refrigerate for 15 minutes.
- Prepare mini cupcake pan with mini cupcake liners.
- Melt white chocolate chips.
- Coat the bottom of each mini cupcake liner with white chocolate.
- Shake pan to level it out.
- Place 2 circles of dough in each liner.
- Using remaining melted white chocolate chips, cover each sugar cookie circle. Shake pan again to level it out.
- Top each off with sprinkles of your choice.
- Refrigerate until bark is hardened.
You could make these sugar cookie bites in any color with ANY sprinkles!
