Lemon Meringue Rice Krispie Treats
Rice Krispie treats were one of my favorite snacks as a kid, but since then I’ve sort of outgrown them. Why waste time getting marshmallow creme in unmentionable places when I could just gorge myself on Ben and Jerry’s instead? That said, I’m going to have to revise my opinion after trying these Lemon Meringue Rice Krispie Treats. They take traditional Rice Krispie treats and blow them out of the water with delicious lemon-y flavor. Oh, and one of the ingredients is NERDS. What’s not to love?
What You’ll Need to Make Lemon Meringue Rice Krispie Treats:
- 6 cups Rice Krispies cereal
- 3 Tbsp salted butter
- 4 cups miniature marshmallows
- 3 Tbsp powdered lemonade mix
- 1 ounce marshmallow creme
- Yellow Lemon Nerds candy
How to Make Lemon Meringue Rice Krispie Treats:
Coat the bottom and sides of an 8×8 inch baking pan with non-stick cooking spray.
Melt the butter in a large saucepan and add the mini marshmallows, stirring constantly until melted. Remove from heat.
Add the powdered lemonade mix to the melted marshmallows and stir to combine. Do the same with the Rice Krispies cereal and stir until all the cereal is coated.
Turn the mixture into the baking pan and, using a piece of wax paper, press it down firmly.
Place the marshmallow creme into a ziploc bag and cut a small hole out of one corner, creating a piping bag.
Allow the treats to cool completely, then pipe the marshmallow creme onto your Rice Krispie treats and sprinkle with yellow lemon Nerds candy.
