Move over cheese boards

Sharable Potato Boards are the hot new thing, and I’m all in!!

There is nothing better in life than a fluffy baked potato covered in melty butter, gooey cheese, sour cream, and homemade ranch dressing — just try to prove me wrong.

That is precisely the genius idea behind these delicious potato boards.

They combine the roasted yumminess of potatoes, with anything and everything you’ve ever wanted to put right on top of that starchy goodness.

Buckle up, because this just might be the next big thing at your holiday party.

How To Make A Potato Board

First things first. You need to choose your potatoes.

Go with a variety — Russets, red potatoes, Yukon Gold, some of those itty bitty fingerling potatoes…

Just get whatever variety the grocery store has in stock.

Now, you want to roast those babies.

Cut the bigger potatoes into chunks — medallions, strips, squares — go crazy.

Make them just bigger than bite sized — big enough to handle with your fingers and dip.

You want to coat them in olive oil, salt and pepper, and whatever herbs you want — garlic, rosemary, thyme, etc.

Spread them out in an even layer on a cookie sheet and pop them in a 400ºF oven for about 30 to 35 minutes — until they are fork tender and a little crispy and brown.

After they cool a few minutes, spread those potatoes out on a food board — you can get all fancy with them if you like.

If you want, brush some melted butter on top of the potatoes, and sprinkle with a bit of coarse salt.

Next, you want to add your dipping sauces in pretty little bowls around the potatoes on the food board.

Go nuts.

Herb infused butter, homemade ranch dressing, homemade bleu cheese dressing, sour cream, horseradish sauce, some sort of cheese sauce — get creative.

Now, put that potato board in the middle of your table, and watch how fast people dig in!

I am obsessed, and you are going to LOVE how much people like these potato boards.
