Easy S’Mores Cupcakes

These Easy S’mores Cupcakes combine chocolate, graham crackers, and marshmallow topping to make the perfect bite-size S’mores treat. It’s the best recipe to make when you can’t make S’mores over an open fire.

When I have a sweet tooth, one of my go-to sweets is a delicious, melty S’more.

The problem is, I can’t just go into my backyard and start a fire and while I’ve been meaning to get a firepit for our backyard, I still haven’t.

That is where this recipe for S’mores cupcakes comes in handy. It has all the taste of a chocolately sweet treat without the need of a fire.

This is an easy recipe that makes homemade cupcakes out of flour and cocoa and a delicious cream cheese frosting.

Once you’ve made your batter, fill the muffin liners about half way full.

While those are baking you can make your frosting and set it aside.

Once your cupcakes are baked, remove from the pan and allow to cool before frosting otherwise your frosting will melt right off.

Once cooled, frost your cupcakes and top with some crushed graham crackers and a piece of Hershey’s chocolate. YUM!

Ingredients

For The Cupcakes

  • 10 Tablespoons softened butter
  • 1 ¼ Cup granulated sugar
  • 4 Eggs
  • 1 tablespoon vanilla extract
  • 1 ½ Cups all purpose flour
  • ¾ Cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ Cup milk

For The Frosting

  • 1 Cup softened butter
  • 4 oz softened cream cheese
  • 1 teaspoon vanilla extract
  • 4 Cups powdered sugar
  • ½ Cup crushed graham crackers
  • 2 Hershey’s chocolate bars

Instructions

For The Cupcakes

  • Preheat your oven to 350° in line a cupcake pan with cupcake liners
  • In a large mixing bowl, beat together your butter and sugar until light and fluffy
  • Mix in your eggs and vanilla
  • Mix in your flour, unsweetened cocoa powder, baking powder, and salt
  • Now mix in your milk
  • Bake for 15 minutes and let cool
  • While your cupcakes cool, make your frosting

For The Frosting

  • In a large mixing bowl, beat together your butter and cream cheese until light and fluffy
  • Mix in your vanilla extract
  • Mix in your powdered sugar one cup at a time until thick and creamy
  • Fill your decorating bag with your frosting, twist the top of your bag, and press the tip gently onto your chocolate cupcakes, frost a swirl on your cupcakes starting on the outside of the cupcake and working your way in
  • Top each cupcake off with crushed graham crackers and one chocolate piece and enjoy!
