An effort to eat less meat

I am thirty. Nowadays, thirty is the new twenty. (I think I believe that mostly because I am thirty, but whatever.) But, the thirty year old body is not the same body as the twenty year old body.  I don’t think I can continue to survive off red meat and potatoes for every meal any longer.

Truth be told, I don’t actually think I should have been surviving off that for this long, but I do believe it’s time to make some changes.

I want to say I am just going to quit eating red meat.  That today is my last day ever to touch the stuff, heck… how about we just call it no meat in general?  Sure, I am going to quit it all no problem. I will not be eating meat… for about the next five hours, because that’s when I will be having dinner. So, instead… I am going to try a different approach. I am going to make an effort to make a meatless dinner (that is actually filling) at least once a week. I will scour the internet, find something I think will be EASY to cook, and actually taste okay… and then I will make this meal for my family.  Once a week isn’t all that often, I think I can do that.

So, I have picked out my first meal. It has peppers and pasta. Those are two things I love, so I am not totally leaving my comfort zone. I found this fabulous website with siper simple recipes, and this pasta looks too good not to cook!

  1. Check out the Morningstar Farms website — they have tons of recipes, the most recent one I tried was the meatless lasagna ) which was pretty good initially and DAMN good reheated.

  2. I have recently given up red meat too and use a lot of Holly Clegg’s recipes. Her cookbooks are really southern and contain a lot of fish, crawfish, and shrimp recipes (and they are also healthy). Check it out http://www.hollyclegg.com/

    Meatless meals are easy if you go high on flavor.

    My lunches are usually meatless, and dinner mostly chicken or fish. Red meat is an occasional treat.

    I cook a lot of Asian cuisine, and chicken soups and so on, even fish bakes and cous cous tastes surprisingly nice, depending on the sauce you use.

  4. I serve meatless meals at least 2x a week. It’s now given us an opportunity to try many different cuisines. Since we have picky eaters right now, meatless meals has let us try Greek, Thai, Indian and traditional Spanish dishes. We all feel soooo much better.
