Delightful Blackberry Cupcakes

I’m always looking for fresh new recipes to celebrate the holidays. This time of the year I love sweet things and my go-to is typically a fruity dessert recipe which inspired me to make these insanely delicious Delightful Blackberry Cupcakes are the bomb.com!

Typically when you think of Blackberries you may think of Summer but did you know that blackberries ripen at different times of the year depending on when you live and where they are grown?

It’s true!

For me, I love baking with fresh delicious berries for fall. Anytime I can use berries as a way to sweeten up a dessert, it’s a good day.

These also are in one of my favorite colors: purple! Purple is a perfect color for fall too!

Blackberry Delight Cupcakes

Ingredients For Cupcakes:

  • 2 3/4 cups all-purpose flour
  • 2 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter
  • 1 1/3 cups granulated white sugar
  • 3 egg whites and 1 whole egg
  • 2 teaspoons vanilla extract
  • 1 cup milk

Ingredients For Icing:

  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 to 3 Tbsp. blackberry juice (you’ll need 24 blackberries to top these cupcakes, so make sure you have enough to ‘juice’ at least 2-3 Tbsps from remaining blackberries. Buy an extra pint if you need to!)

Ingredients For Filling:

  • 1 can blackberry pie filling

Ingredients For Topping:

  • Fresh blackberries

How To Make Blackberry Delight Cupcakes:

For Cupcakes:

Preheat oven to 350° and place paper baking cups into 24 regular-sized muffin cups.

In a medium bowl, mix flour, baking powder, and salt.

In a large bowl, cream sugar, butter, and eggs.

Next, add vanilla extract.

On a low speed, alternate blending in dry mixture and milk.

Fill each muffin cup up about 2/3 full and bake for 20-25 minutes until an inserted toothpick comes out clean. Cool thoroughly before filling and frosting.

For Filling:

Once cupcakes are thoroughly cooled, spoon-cut just about a teaspoon from the middle (going in from the top) and fill in with blackberry pie filling.

For Frosting:

Beat butter with an electric mixer at medium-high speed until creamy.

Gradually beat in sugar until smooth.

Beat in vanilla extract and gradually add blackberry juice until desired consistency is reached.

Frost each cupcake and decorate tops with one blackberry a piece.
