How To Make Easy Rotisserie Chicken Salad

So, the secret to this chicken salad is the rotisserie chicken. It is a shortcut that I LOVE, and it is so full of flavor!!

I like to use the rotisserie chickens from Costco, because they are like $5, and they are GIANT.

If you get a chicken from Walmart or your local grocery store, they tend to be a lot smaller. You may need to adjust your ingredient amounts down to tablespoons instead of cups.

Never fear, it will still come out DELISH!!

Ingredients

  • 1 Rotisserie Chicken
  • 1/4 Cup Sweet Pickle Relish
  • 1/4 Cup Dill Pickle Relish
  • 1 Cup Grapes (Green or Red Seedless Will Work)
  • 1 Granny Smith Apple
  • 1 Rib of Celery
  • 1/4 Cup Mayonnaise (Plus More If Desired)
  • Salt and Pepper to Taste

How To Make Rotisserie Chicken Salad

Take the skin off the rotisserie chicken, and take all the meat off of bones. If you have a food processor, mince it up. If you don’t have a food processor, chop it into tiny pieces.

Dice or mince up the grapes, granny smith apple, and celery. Just make sure they are tiny pieces.

Put the chicken, the minced up grapes, apple, and celery, and the mayonnaise into a big bowl.

Stir it all together. If it doesn’t come together in a consistency that you like, add more mayonnaise. Just add small amounts at a time. Remember, you can always add mayo, but you can’t take it away once you add it.

Add salt and pepper, and stir it all up.

Taste the mixture. I’m going to go ahead and bet it is near perfect. BUT, adjust the seasoning, if you need a bit more salt.

That’s it!! Enjoy this chicken salad by itself, on a croissant, with some crackers, in a sandwich, or however you so desire. Regardless of how you eat it, it WILL be amazing!!

  • 1 Rotisserie Chicken

  • 1 Rib of Celery
  • 1/4 Cup Mayonnaise (Plus More If Desired)
  • Salt and Pepper to Taste

Instructions

  1. Debone and Deskin the Chicken.
  2. Mince or Dice Up the Chicken
  3. Mince or Dice The Grapes, Apple, and Celery
  4. Put It All in a Big Bowl With the Pickle Relishes, Mayonnaise, Salt, and Pepper
  5. Mix It All Up.
  6. Taste. Adjust Seasoning As Needed.
  7. Enjoy!

Notes

Eat it by itself, on a croissant, in a sandwich, or with crackers. DELISH!!
