4-Ingredient Instant Pot Salsa Chicken
Don’t you just LOVE dishes that you can throw in the Instant Pot, and they cook themselves into a nice meal in less than an hour?
That is this Salsa Chicken recipe. It is so easy, I almost shed happy tears of joy.
What You Need:
- 4 Frozen Boneless Skinless Chicken Breasts
- 1 Cup Water
- 1 Cup Salsa
- 1 Package of Taco Seasoning
That’s ALL!!
Here is what you do:
Throw all the ingredients in the Instant Pot. I mean, you can stack them nicely — chicken, then water, then salsa, then taco seasoning, — but for real, just throw it all in the pot.
Check the sealing ring on the lid, make sure it is on good, then secure the lid onto the pot.
Make sure your Vent is set to closed.
Cook on Manual for 15 minutes.
Let it do it’s thing. When the timer is done, let it release the steam naturally.
Shred the chicken, and then do with it as you will.
We use this Salsa Chicken in soft tacos, over rice, in enchiladas, use it for fajitas, and we eat it by itself with a vegetable and a side salad.
Add a can of rinsed black beans or corn before you cook it, to give it a bit more hardiness.
You can easily freeze this, and use it for leftovers at a later time. If you don’t know how long cooked chicken is good in the freezer, check out this site.
