Mason Jar Pineapple Upside Down Cake

I think every family has birthday traditions, and mine is no different. The birthday person always picks their favorite dinner – lasagna for me – and their favorite cake (chocolate on chocolate anything is mine). It’s so predictable in my family that I could actually list off exactly which cake each person would pick, without batting an eyelash. For my dad (whose birthday is coming up fast), it’s pineapple upside down cake. Since my dad is trying to get healthier (we all are, who isn’t?) I decided this year for his birthday I’d try to make a more ‘single serving’ birthday cake: enter the Mason Jar Pineapple Upside Down Cake. I have to be honest, when I first started working on this one, I wasn’t sure if it would turn out how I wanted. I wasn’t sure it’d have that truly ‘cakey’ taste to it. Boy, am I glad I was wrong. This cake is so moist and so delicious! I’m so glad to share it with my dad on his birthday (HAPPY BIRTHDAY, DAD!!!) and with all of you! Enjoy!!

What You Need To Make Mason Jar Pineapple Upside Down Cake:

  • 12 4oz mason jars
  • 12 maraschino cherries
  • 1 can of Crushed Pineapple Juice drained
  • 1 1/2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup solid vegetable shortening
  • 2/3 cup granulated sugar
  • 1 large egg
  • 3/4 teaspoon vanilla extract
  • 2/3 cup milk

How To Make Mason Jar Pineapple Upside Down Cake:

Preheat oven to 350.

Mix the flour, baking powder and salt. Set aside.

Using an electric mixer, mix together the shortening, granulated sugar, egg and vanilla.

Blend in the flour mixture alternately with the milk, beginning and ending with flour. Set aside.

Spray each mason jar with cooking oil like Pam. Place 1 cherry on the bottom of each jar. Place 1 tbs of crushed pineapple on top of each cherry.

Pour batter into each jar only filling about half way.

Place all jars on a cookie sheet and bake for 15-20 minutes or until golden brown on top.

Remove from oven and let cool for about 10 minutes. Serve right in the jar or tip upside down to remove cake.

Place seal tight lids on top and store in the fridge for up to 1 week. Enjoy!

Pro Tip: To add to the traditional pineapple upside down cake taste, add a teaspoon of brown sugar into the bottom of each mason jar, on top of the cherry. It’ll give the cake a syrupy topping once you tip it out. Enjoy!

  5. I haven’t made it but for sure I am it sound so good .

  6. The opening screen lists a can of pineapple juice but when one opens the site to make it the juice isn’t ther, only the milk. I made it w/o juice and it was fine. Better cold than warm. Pretty.
