Peanut Butter and Jelly Linzer Sandwiches

When I was in school – you know, back when dinosaurs walked the earth – lunch was easy. A sandwich, apple or carrot slices, and milk from the lunch line. Boom. Done. Now, though, it’s like going to school with a plain ol’ sandwich is almost a mark of death. It’s not that my kiddo is spoiled (mostly), but since she’s not eating at home I still want her to know that I put a little extra into her lunch. These Peanut Butter and Jelly Linzer Sandwiches are perfect for that. They’re just enough cute for her to show off to her friends, and healthy enough that I know she’ll be full until she gets home. Plus, on weekends these are so much fun to eat during backyard picnics. And don’t worry about the leftover bread…I use it to make these awesome Peanut Butter and Jelly Kabobs! Enjoy!

What You Need To Make Peanut Butter and Jelly Linzer Sandwiches:

  • 5 Slices of Bread
  • 1 Green Apple
  • 6 tbsp. Jif Creamy Peanut Butter
  • 2 tbsp. Smucker’s Strawberry Jam
  • 2 tbsp. Smucker’s Concord Grape Jelly

How To Make Peanut Butter and Jelly Linzer Sandwiches:

1. Using the linzer cookie cutter, press down onto the bread and cut out 6 pieces WITHOUT the star center and 6 pieces WITH the star center. Be sure to cut the circles as close together as possible. You should be able to make 2 to 3 pieces per slice.

2. Using the leftover bread, remove the star cookie cutter and cut out as many stars as you can.

3. Slice the green apple down each side to create nice size pieces. Cut at least 3 circles with the linzer cookie cutter from the apple slices.

4. Spread peanut butter onto bottom circles, add strawberry jam or grape jelly onto the peanut butter, add an apple slice, and spread more peanut butter onto the bottom of the bread with the star cutout.

5. Add more layers by repeating step 5 if you so wish!

6. Serve and enjoy!
