This Coconut Pineapple Mojito is all the flavors of Summer and give a refreshing drink to parents everywhere.

Drinks like these I call “sanity juice” for my husband. He gets a tasty drink that calms and relaxes him and totally helps him keep his sanity when it’s Summer break. HA!

Coconut Pineapple Mojito

The secret to a truly good mojito lies within the natural flavors from the ingredients.

This means you have to extract the flavors from those ingredients, especially the mint because you can’t have a mojito without mint!

The easiest way to extract those flavors is by using a muddler. A muddler is designed to mush/smash ingredients to extract natural oils and flavors. It works so well so if you don’t have one, get one!

They are quite inexpensive as well, in fact, this muddler is only $6!

Here is what you need to make a delicious Coconut Pineapple Mojito:

How to make it:

Start by placing your fresh mint leaves and sugar cane syrup into the bottom of your cocktail glass and use the muddler to smash them. The more you smash them, the more flavor from the mint will come out.

Next, cut up your pineapple, lime and open your coconut. Limes should be cut into quarters (makes for easier mashing). You want to drain your coconut and save the water (you can also save time by purchasing coconut water or milk).

Place some limes into the bottom of your cocktail shaker and use your muddler again to smush the juices out of the limes.

Pour the lime juice into the cup with the mint.

Now, do the same thing with the Pineapple, place it into the shaker, mush with the muddler and pour into the glass.

Next, pour some tonic water into the glass filling it about half way.

Add some ice and finally, add your rum (as little or as much as you want but typically 1-2 shots).

Stir and enjoy!

  • Water from Fresh Coconut

  • ½ Tablespoon Liquid Sugar Cane Syrup
  • 2 oz. Bacardi White Rum
  • ½ Cup Tonic Water
  • Muddler
  • Cocktail Shaker
  • Ice optional

Notes

You can adjust this recipe according to the glass you use. We used a standard cocktail glass for this recipe.
