Mexican Cornbread Your Abuelita Will Love

Everyone has their own very of Mexican cornbread recipes that people love and share across the world with everyone and their mother, and I’m going to add my name to that list too.

This Mexican cornbread is soooo easy to make, and it’s great to make any side item or bread to make with any of your favorite Mexican recipe. If you don’t know what to make for dinner just yet, then don’t worry…daddy is here to help. I’ll make your Mexican food night so much easier with a little menu down below the recipe.

This Mexican cornbread is not only a treat for your mouth to enjoy, it’s so pretty to look at with all of those vibrant colors from the diced multi-colored peppers. It’s a great recipe to make as muffins, like I did, or in a deep dish and cut into squares.

I love making them in muffin tins because I can easily grab one (or three) and eat it on the go. I might or might not have eaten these for breakfast. Don’t stare at me with your judge-y eyes. I see them. Keep ’em going.

The cornbread recipe is so flexible, that you can either eat with a tall, cold glass of milk, or maybe spice it up this amazing Jalapeño Margarita recipe. My personal recommendation is to go with the margarita, but that’s just me. I feel margaritas go great with almost any type of Mexican cornbread recipes that there are out there….especially ours.

You can add in so many other ingredients to truly personalize our Mexican cornbread. I’m a huge fan of adding creamed corn and bacon. You can never go wrong with bacon. Ever.

Then there’s dessert, and these Mexican spiced chocolate glazed doughnuts will totally hit the spot! They’re easy to make ahead of time, so you don’t have stress about making them later on. The most difficult situation that you’re going to be in creating these doughnuts? The wait you have to endure to eat them! Gah…I can’t even.

Do You Have to Use Boxed Cornbread Mix?

No. You don’t. You can make our Simply Southern Cornbread recipe, and you won’t have to change a thing in measurements. Just add in the other ingredients that I have listed in the directions for this recipe, and you will totally be fine. The only things that you will need to omit are the wet ingredients: egg, milk, and butter. Those will have already have been added in from the original cornbread recipe.

Boxed cornbread mix just helps to make life a little bit easier in the kitchen by not having to keep so many ingredients on hand. I love baking, so I always have stuff on hand in my cupboards.

Ingredients

  • 1 – 15 oz. box of Corn Bread Mix or use our recipe
  • 1 Jalapeno chopped
  • 1 Red Pepper chopped
  • 1 Orange Pepper chopped
  • 1 Egg
  • ½ a cup of Butter melted
  • â…” cup of Milk
  • 1 cup of Shredded Pepper Jack Cheese
  • non-stick spray

Instructions

  • Start by adding corn bread mix, egg, milk, and butter into a large mixing bowl.
  • Whisk until smooth.
  • Fold in chopped vegetables and cheese.
  • Grease a muffin tin.
  • Fill each muffin tin 1/2 way.
  • Bake at 375 degrees for 20 minutes.
  • Serve and enjoy!
